Original recipe makes 12
1 cupAll purpose flour
1 cupWhole wheat flour
1/4 cupSplenda; for baking
2 tablespoonSugar
2 1/2 teaspoonBaking Powder
1/4 teaspoonSalt
1 cupBananas; mashed
2/3 cupLowfat Buttermilk; halved
1 largeEgg
1/4 cupCanola oil
1/2 cupUnsweetened Applesauce
1 teaspoonVanilla
1 cupChocolate chips

Banana Chip Muffins Preparation

In a large bowl, combine the flours, sugar, Splenda, baking powder, and salt. Combine the egg, buttermilk, oil, banana, vanilla, and applesauce; stir into dry ingredients just until moistened. Fold in the chocolate chips.

Fill greased muffin cups full. Bake at 400 for 20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
