Original recipe makes 4
4 tablespoonsolive oil
4 Boneless skinless chicken breasts
1 cTomato; diced
1/2 cWater
2 cubesChicken bouillon cubes
6 ozFeta cheese
1 tspDried basil
1 tspGarlic; minced
Freshly ground pepper; to taste
20 ozFrozen chopped spinach; thawed and drained

Greek Chicken Preparation

In medium skillet, brown chicken in olive oil.

Stir in tomato, water, bouillon cube, feta cheese, basil, garlic and pepper.

Simmer for 10 minutes.

Add spinach and simmer for 10 minutes more.

Per Serving: 412 Calories; 25g Fat (53.6% calories from fat); 38g Protein; 10g Carbohydrate; 5g Dietary Fiber; 107mg Cholesterol; 1034mg Sodium.

Easy too make. Browning the chicken was probably the hardest part. Chicken very tender and tasty.
