Sweet Pickled Onions

| 2/3 cups Water | |
| 1/3 cup Vinegar | |
| 2 tablespoon Sugar | |
| 1 1/2 tablespoon Kosher Salt |
Preparation - Pickled Onions
Peel and slice into eighths two large Texas sweet onions. Pack into a glass jar. Set aside. In a saucepan, combine the water, vinegar, sugar, and salt. Bring to a boil. Pour the hot liquid over the onions. Cool to room temperature and refrigerate.
