This spinach and pepper pasta entree is simple, tasty, and filling!
"Very simple weeknight meal. I doubled the recipe. It wouldn't really have been enough for 4 as written. I added 1/2 to 3/4 cup of the pasta water at the end of cooking the vegetables - made the whole thing really creamy. I also added way more fresh basil than called for - about 1/3 cup when I tossed the pasta - don't cook with the onion and garlic if using fresh. I also added about 1/8 cup of olive oil when tossing and considerably more parmesan lots of salt and fresh ground pepper. I guess more is better!"- pols005

Cook the pasta and drain.
Heat the oil over medium high heat, and cook the onion, garlic and basil until the onion is tender.
Add the pepper strips and cook for 3 minutes longer.
Stir in the spinach. Heat for another minute, until warmed through.
Toss with the pasta, and add salt and pepper.
Top with parmesan cheese (leave out for vegan version).

AuntGin 2 days 20 hours agoFabulous! I sautéed the spinach, added some of the pasta water, added more olive oil and puréed the mix to make a sauce. The red bell pepper against the green sauce and white pasta made it look festive indeed.
bdizzle 1 weeks agoI really enjoyed this. It's a simple recipe and you can add whatever you want to it, mushrooms, more peppers, some protein, it all turns out great. I've been using it a lot and I am definitely a fan-thanks for the recipe!

Strivento 4 months agoI added roasted pepper and asiago chicken sausage. I also used some of the pasta water and parm cheese to make more of a sauce. It was delicious.

noelynn1 4 months agoIt is a nice light dinner. I think it would be great as a lunch. My kids 4 1/2 and 6 years old like it. I will have to chop up the red pepper into smaller pieces. I like it a lot. :-)
