This is based on a recipe from the Hershey's Cocoa box and it's a great chocolate cake recipe! This is "health food" because cocoa contains antioxidants! :)
"Amazing chocolate cake... making it for a second time. However, instead of sugar and powdered sugar I am using Xylobrit sugar replacement ( for cake) and Agave powder (for frosting) as my husband is diabetic. (only use two cups of the powder as opposed to three in the recipe for the frosting as its quite stodgy so you don't need as much)
Comes out divine and no you cant taste coffee its just dreamy chocolate! And its so quick to do if you have all the ingredient's to hand. "

Preheat oven to 350 degrees and spray two 9 inch round baking pans with non stick cooking spray. Combine first 6 dry ingredients in a large mixing bowl. Add eggs, milk, oil, and vanilla and beat on medium speed for 2 minutes. Stir in the hot coffee and mix well with a spoon (batter will be thin). Pour batter into pans and bake for 30-35 minutes or until wooden toothpick inserted into the center comes out clean. Cool 10 minutes and then remove from pans to wire racks. Cool completely before frosting.
Melt the butter and stir in the cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistancy. Add more milk, if needed. Stir in vanilla.

Travieso 2 months agoThis cake. This cake is in a word: Awesome. I used Hershey's 100% Dark Cacao in two 9' Nordic Ware round pans. Perfectly light, moist, and delicious. The frosting was awesome, too.

mogriff1 3 months agoThis is a really good cake! It sort of reminds me of Wegman's Ultimate Chocolate cake. I didnt have coffee since we dont drink it so instead I made a cup of hot chocolate using milk. For the frosting I used the whole box of confectioners sugar instead of 3 cups because it was a little too thin for my liking. This is a great recipe and I know I'll make this cake again.

TonyaMiller808 4 months agoI love this cake because it is an oil cake. I can pull it together and have it in the oven in less than ten minutes. I add a tablespoon each of espresso powder and Saigon cinnamon. I frost it with an Italian meringue chocolate butter cream. Sometimes I fill it with pastry cream.
ladylail 4 months agoMy go-to chocolate cake! I use this when making Black Forest cupcakes with Amaretto frosting. Holds up to the rich frosting and pairs great with tart cherry filling. Love this cake!
