Chicken and Rice Casserole

Cheesy casserole that is full of chicken and broccoli

"I thought it was awesome! I've noticed can sizes have gotten smaller, so I added a little bit of whole milk to my "healthy" soups (!) for "more" and so it would spread better. I also used a mix of frozen and fresh broccoli that I microwaved together to get them thawed/steamed. And the last 5 minutes or so I bumped the oven temp up to 400 and that worked for my oven to get the top nice and brown and bubbly, so it was in the oven for a total of about 30 minutes, which I felt was very reasonable! It was a hit with my toddler AND husband (and me!). Thank you!!!"

Ingredients

4 Boneless chicken breasts
4 cups Rice; cooked
1 12-oz can Cream of celery soup
1 12-oz can Cream of chicken soup
1 12-oz can Broccoli and cheese soup
1 cup Velveeta cheese; cubed
2 cups cheese; Shredded
2 cups Broccoli

Servings  

Preparation

Preheat oven to 350

Boil chicken breasts with your seasoning preferences and allow to cool.

Cube chicken breasts and set aside

Mix together cream of celery, cream of chicken, and broccoli and cheese soups

Layer cooked rice at the bottom of casserole pan

Mix the chicken and broccoli into the soup

Sprinkle the cubed cheese onto the rice

Spoon soup,chicken, and broccoli mixture on top of the rice layer

Sprinkle top with shreaded cheese

Bake at 350 until cheese is melted and browned

Was really unsure how this would taste but it was pretty good. 3 out of 5 picky eaters liked it. Easy to make. Might make again. Very difficult to find a good casserole dish but this is the best one I've tried so far. 3 stars

It was tasty. My husband is not a fan of broccoli so instead I used a can of cream of chicken and mushrooms and a bag of mixed vegetables (peas, carrots, corn and green beans)

It was pretty good! I only used a cream of chicken and the broccoli and cheese soup and it was still very creamy. Also used regular shredded cheddar instead of velveta and it turned out perfect. Definitely a classic easy meal for lazy nights
