Ingredients

4 medium potatoes; peeled and sliced thickly
4 Boneless Pork Chops; 3/4 to 1 inch thick
1 package Stuffing mix
1/4 cup Dried cranberries
1 cup Hot water
1 tablespoon butter; Softened/melted
Salt and Pepper; to taste

Preparation

Place potatoes in a 3 quart or larger slow cooker/crockpot; sprinkle lightly with salt and pepper . Top with pork chops. Sprinkle lightly with salt and pepper. Combine stuffing mix and cranberries with 1 cup of hot water and 1 Tablespoon of softened/melted butter. Spoon stuffing over pork chops. cover and cook on low for 7 hrs.

This recipe is so delicious and so easy to make! My husband has already requested it again-- he loves it. I make it without the cranberries.
