"My whole family loved this soup!!! I doubled the recipe to have leftovers and took some to work and shared with a co-worker!! She loved it too and asked for the recipe!
I got a kick out of my daughter who is not crazy about onions.. She kept saying " that's too many onions" lol!! Once it's cooked you don't even know they are in the soup! Its so easy and quick!! i have a very very busy life and it could even be adapted for the crock pot...It's very creamy chunky soup! Definitely will be making this over and ovr!!"

Ingredients

1 large Onion; chopped
4 teaspoon Vegetable oil
3 tablespoon All purpose flour
2 cups Broccoli; flowerets
2 cups milk
14 1/2 ounces Chicken bouillon
1 1/2 cups Red potatoes; cubed
1/4 teaspoon Salt
1/8 teaspoon Red pepper; ground
1 cup Cheddar; shredded
1 small Tomato; seeded and chopped
1/3 cup Sour cream

Preparation

In a large saucepan cook onion in hot oil until tender. Sprinkle flour over onion and stir to coat. Add the broccoli, milk, broth, potatoes, salt, and red pepper. Cook and stir until thickened and bubbly; reduce heat. Simmer, covered for 10 - 12 minutes or until vegetables are just tender, stirring occasionally. Add cheddar cheese, tomato, and sour cream; stir until cheese melts.

Great soup! My husband made it from my 'try soon' list and didn't deviate from the recipe a bit. Turned out wonderful! Thanks for sharing

This soup was soooooo good! But I did make a few changes. I I did have sour cream and half cream cheese (both with chives ), I added mushrooms and fresh garlic!

Trying to make some nice soups for my Mum who is very sick and only wants liquidy foods. This one is ideal! The quantity was probably a little too much for us. I think we are have more than 8 servings there. I've frozen three boxes of it. For vegetarian version I used veg stock instead of Chicken Bouillon. Used Philadelphia soft cheese instead of sour cream because that's what I had in the fridge. Mmmmm yummy!

This soup was delicious! The only changes I made because of ingredients I had on hand, was that I grated an assortment of cheeses and instead of one fresh tomato, I added a small can of tomatoes (diced, stewed etc.). Also additional water --1 to 2 cups--as it was cooking broccoli and diced potatoes (I used Yukon). Really good!
