Diana's low calorie, low fat very nutritious lentil soup. This is a spin off of my auntie's (in Greece) awesome lentil soup.

"You also try it without: Beef Broth, Brown Gravy Mix (Sam's) and Celery.
You can also boil lentils in water and then with a strainer remove the water and add oil, onion and other materials.
In this way we achieve a nice brown color... like this photo.

1 1-lb packageDry Lentils
4 tablespoonolive oil
1 largeOnions; chopped
1 largeCarrot; grated, roughly 1 cup
1 1/2 teaspoonMinced Garlic; (or 3 cloves chopped)
3 stalksCelery; chopped
1 14.5-oz canDiced Tomatoes
2 TablespoonsTomato paste
3 cans (14 oz)Beef broth
2 cupsWater
3 Bay Leafs
1 pinchSalt
1 pinchPepper, black
2 tablespoonVinegar
4 tablespoonsBrown Gravy Mix; (Sam's)

Di's Authentic Greek Lentil Soup (low Cal, Low Fat) Preparation

Examine, sort and rinse the lentils well, put aside.

Saut for roughly five minutes the onions, carrots, garlic and celery in olive oil.

Add dice lentils, tomatoes, tomato paste, beef broth, water and bay leaf and bring to a boil. Once you have reached boiling point lower stove to minimum cover and simmer for 1 to 1 hours or until lentils are tender.

Salt and pepper to taste. At the end of the cooking period add the 2 tablespoons of vinegar. Serve the lentil soup hot with olives for en even more authentic Greek meal. Enjoy!

    This was fantastic. I've never made lentils before. Even my son liked it! I added the cumin that was suggested by another review.

    Tasty, easy and quick. I skipped the vinegar because some in my family don't care for it. I added half a teaspoon of ground cumin in its stead. I also used a stick blender at the end for a smooth texture.

    This was a great recipe, and was good even without the gravy mix....delicious and hearty! I added a little cayenne, cumin, and curry powder for some added zing. This was especially good served with a crusty Italian bread.

    I make this all the time. This is the same recipe that my mom used when I was growing up, and I absolutely adore it.

    The only difference for us is that I don't add the gravy mix and instead of tomato paste, I add ketchup to taste while its cooking.

    I used my Christmas standing rib roast ribs to make broth and served with cornbread. Also, didn't use the gravy mix.
