My mom's Banana Nut Bread Recipe. Make it whenever you have overripe bananas laying around the house. Three mashed bananas makes about a cup.
Preheat oven to 350 degrees.
Sift together the dry ingredients. Add 3/4 cup of the nuts. Combine the remaining ingredients and add to the dry ingredients. Stir only until the flour is moistened. Pour into a greased 9x5 inch loaf pan. Sprinkle the remaining nuts over the top of the loaf. Bake in a 350 oven for 1 hour.
Banana nut bread is baked when the interior temperature is between 200 and 205 degrees F. The top should be brown.
Someone told me to freeze the old bananas first. The cold temperature liquefies the banana inside the peel. Thaw them before baking day. Trim off one end of the banana and squeeze the banana "filling" out like frosting into the liquid ingredients. It mixes perfectly and tastes great.
