This is one of my son's favorites and it has everything in it to make a meal by itself, but it's also good served with a salad.

"It was great! We made a couple of changes...some intentional some not:

We used regular long grain rice and not minute rice. We used chunky salsa and not picante. My wife is gluten intollerant so we couldn't use the ranch beans; we used black beans and used the spices listed on the can of ranch beans. Nest time I want to use a little cilantro and some chopped up peppers (jalapeño, serrano, etc)." - vdianellos

1 1/2 poundLean ground meat
1 mediumOnion; chopped
4 ouncesPicante sauce; We like Pace's medium
1 1/2 cupMinute Rice; cooked by package directions
salt and pepper; to taste
1 canRotel tomatoes
1 12-oz canRanch Style Beans
1 poundsharp cheddar cheese; Grated

Bryan's Mexican Casserole Preparation

Brown the meat and onion and drain. Add the other ingredients except the cheese and simmer until slightly thickened. Put half of the meat mixture in the bottom of a 9 x 13 inch baking dish. Add half the cheese. Repeat layers ending with cheese. Bake at 300 degrees until the cheese is melted and the casserole is bubbly.

    I used lean ground turkey and seasoned with McCormick cheesy taco sauce & used Goya (Mexican) yellow rice instead. IT WAS AMAZING! We ate it with tortilla chips and my family could not get enough.

    Made this for dinner tonight! So good!! I did not use the ground beef, I used chicken breast that I cut into pieces. I also used regular rice instead of instant & was worried that there wouldn't be enough liquid to cook the rice

    Made recipe as stated, except used only 1lb. ground beef®ular long grain white rice. It is VERY good and will definitely become a weekly rotation! Next time I'm going to try Ranch Style Beans w/jalapeño's to kick up the spice a bit!

    I found this recipe in the 'Use Up Leftovers' section, searching for beans and rice. I always boil pinto beans and make spanish rice. I followed the recipe using these substitutions in place of the minute rice and canned ranch beans. It fed my family of 5 very well with leftovers. My family enjoyed this meal with Tostadas. Very tasty meal! My picky eaters enjoyed it enough to eat around the tomatoes. I will totally make this again and maybe add some ground cumin and some california chili powder. This recipe is warm and filling as well as quick and easy, all the while serving the purpose of using up my leftovers.

    Very very good!!! I didn't use any beans (partially because I couldn't find ranch style beans). Turned out great though. Perfect amount of spice. We added a dollop of sour cream to the dish and ate it with both bread and tortilla chips. Yummy!!!

    Very good recipe. I used black beans instead of ranch style, mushrooms in place of the tomatoes, subbed 1/2 a LB. of the hamburger for 1/2 a LB. of corizo and use twice as much picante sauce. this is about the 4th time I have made it. love it!!
