"My family loved this cobbler... Although I added a bit more cinnamon sugar and let the peaches sit overnight in the fridge so they were extra sweet... :) The recipe said to lattice the pie crust over the top which isn't in the picture, I did this giving it a much more appealing to the eye... :)" - Got2bgirlie

Original recipe makes 6
3 cupsPeaches; peeled and sliced
pinchSalt
1/2 teaspoonLemon juice
1/8 teaspoonCinnamon
2/3 cupSugar
Butter; as required
1 eaPillsbury pie crust

Mom's Peach Cobbler Preparation

Put peach slices in a medium sized mixing bowl and add salt, lemon juice, cinnamon, and sugar. Stir and set aside, stirring occasionally to make juice.

Unroll pie crust on a flat surface and set a loaf pan on it and cut the crust around the bottom of the pan, reserving the remaining crust. Rub butter on the bottom and sides of the pan and place the cut out crust in the pan. Bake at 350 degrees until lightly browned and let it cool. Put the peach mixture in the pan on top of the crust and dot with a tablespoon of butter. Use the remaining crust to put on top, cutting to make a laticed top and sprinkle with 1 1/2 tablespoons of sugar and 1/4 teaspoon of cinnamon. Bake at 350 degrees for 30 minutes or until browned on top. Top with ice cream.

    I hate canned peaches and really don't like pie, but I used canned with this recipe and have to say that this is my FAVORITE dessert nowadays! I doubled recipe, but only used 2/3 cup sugar total and used 2 big cans of peaches (drained). Will try with fresh peahes when they are in season!

    Very popular in my home I used canned and fresh peaches to give it a kind of mixed more juicy flavor. I also used crisco and had nutmeg very tasty similar to my dad's recipe. :-) enjoyed thanks

    I have to admit, that I did only the filling part of this recipe. I made a vanilla wafer crust for the bottom part of the pie, and crumbled some quick oats on top of the filling. It was a hit, because the filling wasn't too sweet , it all balanced well. I used Splenda instead of sugar.
