Pineapple Banana Muffins

Ingredients

1 cup All purpose flour
1/4 cup Uncooked quick oats
1/2 teaspoon Baking soda
1/4 teaspoon Cinnamon
1/4 teaspoon Salt
6 tablespoon Butter
3/4 cup Light Brown Sugar; firmly packed
2 large Eggs
1 teaspoon Vanilla
2 large Ripe bananas; mashed slightly
1/2 cup Crushed pineapple in heavy syrup; drained thoroughly
1/2 cup Chopped pecans; or walnuts

Servings  

Preparation

Preheat oven to 350 degrees. Line 12-cup muffin pan with cupcake liners; set aside.

In medium bowl, combine flour, oats, baking soda, cinnamon, and salt; set aside.

In large bowl, with electric mixer, beat butter and sugar until light and fluffy, about 5 minutes. Beat in eggs, one at a time, and vanilla until blended, scraping sides of bowl occasionally. Gradually beat in flour mixture, then bananas and pineapple, just until blended.

Spoon evenly into prepared muffin pan.

Bake 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing to wire rack to cool completely.

Freezes well.

Moist and tasty, I had an extra banana so had thrown that in. Next time will up the cinnamon a little. 223 cal, 10.2g fat, 4.3g sat fat, 30.8g carbs, 18.4g sugar, 2g fiber, 3.8g protein, 157.7 sodium, 50.5 mg Colest.

Love this recipe! I use it all the time. I have never put the pineapple in it and it is still my favorite!!

I had some compliments on them, but they just weren't my cup of tea.

I'm in Autralia so I didn't click until later that 350 degrees was faranheit. Although our ovens don't go that high so I had it at 200 degrees based on gas fan forced. Word to the wise in Australia - 180 degrees is sufficient and 170 degrees for gas fan forced at 20mins turns out a great muffin. I also got caught out not mashing the banana and draining pineapple even though dry ingredients were suggested to be combined and set aside. For us beginner cooks - might be an idea to edit recipe to suggest getting pineapple draining early too. Otherwise - yum, just had a warm one - outstanding!!!!!
