1 cupButtermilk
2 cupsSugar
1 teaspoonBaking soda
2 cupsPecans
1 teaspoonVanilla
1 tablespoonButter

Texas Pecan Pralines Preparation

In a 4 quart stock pot, add buttermilk, sugar, and soda and stir until the sugar is dissolved. Boil (medium or low heat) to soft ball stage (234 degrees on a candy thermometer). Remove from heat and add the remaining ingredients and beat briskly until glossy and very thick. Drop by spoon on waxed paper or foil*. If it gets too thick, you can heat it a little. You have to watch closely and stir occasionally - it sticks and burns easily.

Notes

If you want some really beautiful pieces of candy to give as gifts or take to a party, butter two muffin tins and drop the candy into the tins until firm and cool. Gently remove with a rubber spatula. Make small packages of two or three in seran wrap tied with some pretty ribbon.

These are quite possibly the best pralines I've ever had.
