1/2 poundMonterey jack cheese; grated
4 cupsStove Top stuffing for pork; prepared
2 cupsShake and Bake bread crumbs for pork
1 canJalapeno peppers; whole
1 Egg; beaten

Armadillo Eggs (stuffed Jalapenos) Preparation

Preheat oven to 400 degrees. Combine the sausage with the prepared stuffing. Cut stem from jalapeno and make a slit down one side to remove the seeds. Fill the jalapenos with cheese. Add the beaten egg to the stuffing mixture and mix well. Mold the stuffing mixture around the jalapenos and roll them in the bread crumbs until well covered. Place the Armadillo Eggs on a baking sheet sprayed with non-stick cooking spray and bake for 30 minutes or until brown.
