1 teaspoonBaking soda
1/4 teaspoonBaking Powder
2 cupsSugar
1 teaspoonCinnamon
3 eaEggs
1/2 cupSour cream
1 cupVegetable oil
1 teaspoonVanilla
2 cupsZucchini; shredded, unpeeled
1 cupWalnuts; chopped

Zuchinni Bread - Bestever Preparation

Preheat oven to 350 degrees

Shred zucchinni.

Whisk together the dry ingredients. In another bowl, mix the eggs, sour cream, oil and vanilla.

Combine the wet and dry ingredients until just blended. Fold in the zucchini and walnuts.

Spray two regular loaf pans with Pam, add the batter and bake for 1hour and 15 minutes or until done (when a toothpick inserted into the center of the loaf comes out clean.)

The bread took a minimum of 1 1/2 hours to cook. The insides were softy and mushy. Had to bake it until it was almost too dry.

It takes more than 45 minutes of baking time if 350F. It's more like 1 hr 15 min of baking time.

A good bread, but 'bestever?' Needs more spice other than just cinnamon--maybe a pinch of clove or 1/2 t. nutmeg or maybe more cinnamon, or more nuts. Was a nice, sweet bread, but certainly not a best-ever. Sorry. :(
