Easy Grilled Chicken Marinade

My family has enjoyed this grilled chicken marinade for more than two decades, which I think originally came from the Star Ledger of Newark NJ.

The recipe is simple -- dare I say foolproof? -- and delicious... And the smell coming off the grill has always been a sure sign of summertime. I like to pair this with fresh green beans, corn on the cob or couscous.

Original recipe makes 4 Servings
3 wholeEggs; whisked
2 tablespoonsWhite vinegar
3 tablespoonsFresh parsley; chopped finely
2 teaspoonsSalt
1 teaspoonFreshly ground pepper
3 tablespoonsVegetable oil
1 wholeYellow or white onion; finely diced
4 wholeChicken breasts; or chicken skin-on

Easy Grilled Chicken Marinade Preparation

Prepare marinade:

In a non-reactive bowl, whisk egg and add in all other ingredients.

Add chicken. Marinade in a ziploc bag for at least 4 hours; ideally 1-2 days. Turn occasionally.

Prepare medium-hot grill. Let it warm up at least 15 minutes. Place chicken on the grill. After 3 minutes, pick it up and give it a quarter turn. Sear another 3 minutes. Flip over. After 3 more minutes, give it another quarter-turn. Grill until internal temperature reads 160 degrees F, about 10 minutes total depending upon thickness.

    Used different seasoning but same technique Only marinated about 5 hours but it was great. My 2 year old grand daughter ate about 4 oz. of chicken by herself. Even the 1 year old had no trouble chewing this. Will definitely make again. Wonder if this technique would work with pork or beef?

    This was good. I had never seen eggs used in a maranade before so I was surprised at how it turned out. We used thighs and legs, marinaded for 2 days and they came out quite well.
