2 tablespoonButter
1 10-oz packageCouscous; I prefer Near East brand
2 cupsChicken broth
1 wholeSpring onion; chopped
1/2 cupGolden raisins; fresh and plump
1 wholeCinnamon
2 tablespoonFresh parsley; chopped

Couscous with Golden Raisins and Cinnamon Preparation

Bring chicken broth to a boil in a coverable saucepan.

Add couscous, butter and cinnamon stick. Stir. Immediately turn off heat and cover tightly. Let stand for 5 minutes. Remove cover and stir in raisins and spring onion. Add parsley, add more butter and salt and pepper as desired; serve immediately.

NOTE: Couscous cools rapidly, due to the large surface area. Prepare this dish only at the last minute -- takes only 10 minutes maximum, start to finish. Or, pre-warm a serving dish.
