Original recipe makes 12
1 packagesLemon Gelatin; I used sugar-free
3/4 ounceUnflavored gelatin; three envelopes
2 cupsWater; divided
1 cupTequila; don't waste the good stuff on this
1/4 teaspoonLemon Extract
1/4 teaspoonOrange Extract
1 mediumlime

Knox (your Sox Off) Blox Preparation

Place one cup of cold water in a meduim size mixing bowl. Sprinkle the flavored and unflavored gelatin over the cold water and stir briefly. Allow this to set for at least five minutes while the gelatin "blooms".

Heat the second cup of water to boiling and stir it into the dissolved gelatin. Mix until it's completely dissolved and looks fairly clear. If you want to add a small drop of green food coloring at this point you'll get a more "Lemon-Limey" color. Allow this to cool for a few minutes then add tequila and the two extracts. Stir briefly and move the bowl to the refrigerator to partially set.

In the meantime wash the lime and cut thin slices. Remove any seeds. You can cut each slice in half if desired.

When the gelatin is partly set and starting to thicken pour some into each well of an ice cube tray or 2 ounce souffle cup. Place a small slice of lime in each one. Return to the refrigerator until they are completely set.

I happened to have "shot glass" ice molds so I formed some into small glasses and added a small piece of gummi worm to the bottom of each shot. If you have these available this makes a cute presentation with a little extra tequila poured into each shot.

Notes

I formed some of mine in "Shot-glass" moulds. You can pour extra tequila in the shot, drink it then eat the glass.

Wow, upscale Jell-o shots! Who knew? Perfect for Seafair weekend (a big waterfront party) here in Seattle.
