"Made this tonight for the first time. The Tilapia tasted restaurant quailty. I added black pepper to the fish before baking, otherwise I followed the recipe. My wife absolutely loved it and for the very first time I was able to enjoy baked fish. I'm a deep-fried fish fanatic. This recipe is a keeper. Thanks so much for sharing, Pami."

2 pounds Tilapia fillets; (or orange roughy, cod, swai or red snapper)
2 tablespoons Lemon juice
1/4 cups Parmesan cheese; grated
4 tablespoons Butter; room temperature
3 tablespoons Mayonnaise
3 tablespoons Green onion; finely chopped
1/4 teaspoon Old Bay seasoning
1/4 teaspoon Dried basil
Black pepper
1 dash Hot pepper sauce

Original recipe makes 8 Servings



Preheat oven to 350F.

In buttered 13-by-9-inch baking dish or jellyroll pan, arrange fillets in single layer. Brush with lemon juice.

Bake fish in preheated oven 10 to 20 minutes or just until fish starts to flake.

Meanwhile, in a small bowl combine cheese, butter, mayonnaise, onions and seasonings. Mix well with fork.

Spread fillets with cheese mixture and bake until golden brown, about 5 minutes.

Baking time will depend on the thickness of the fish you use.

Watch fish closely so that it does not overcook.

Yeah, at this point, I turn the broiler on, and stick the pan back in the oven, on the rack it started on, so it's broiling from like a foot away. Browns but doesn't burn quickly at this distance.

I had to make a few minor adjustments for lack of a couple of spices, but it was awesome.

Amazing dish!!! I also did the broiler and added a little more spice. First time cooking fish and it was delicious. Am making again tonight

Even as a Marylander, I omitted the Old Bay (which I buy in bulk, so not because I didn't have it on hand but rather because it just didn't seem to fit). The results were delicious. Though it made an otherwise healthful option not so healthy, my family members who aren't big on fish were thrilled.
