Fast and easy, with a nice mix of tastes and textures.
Put olive oil in a large saute pan. When it gets hot, add garlic and stir until aromatic. Add turkey bacon and scallions and cook aprox. 2 minutes. Add broccoli, zucchini, and crookneck squash, and stir fry until broccoli is bright green. Add olives, artichoke hearts, tomatoes and garbanzo beans. Sprinkle on italian spices, salt and pepper. Cover and simmer aprox. 10 minutes. Serve over whole wheat pasta, and sprinkle with parmesan cheese.
