This is a cheese dip from a local restaurant that we cloned. I have gotten nothing but rave reviews from those who have tried it.

"I went to High School in Conway with Mr Stobaugh's daughter. We used to get this cheese dip for class events. I loved it so much! This recipe is as close as I've had, and I've tried many! I made some tonight. I left out the salsa and used a can of Hot Dog chili, as it has the texturized vegetable protein like the original has. " - cynhaynes

Original recipe makes 12
2 cupsWater
1 cupCoffee creamer
1 poundVelveeta; cubed
1/4 teaspoonGarlic powder
1 teaspoonOnion powder
1 teaspoonGround cumin
2 teaspoonDry mustard
1/2 cupFlour
1 teaspoonLemon juice; optional
3/4 cupSalsa; optional
1/3 cupChili without beans

Stoby's Cheese Dip Preparation

Blend all ingredients except cheese in a blender. Add to large pot on medium heat. Add cubed cheese. Stir often until cheese is melted. Cheese dip will thicken as it cooks.

Notes

I always leave out the salsa and use a whole can of chili/no beans.

    You use powdered coffee creamer. I live in the town that has this restaurant and this tastes exactly like it!

    I grew up in Conway, Arkansas and eating at Stoby's was a regular trip to town. I moved to Seattle about 5 years ago and have missed having Stoby's Cheese Dip ever since. This is pretty close and tasted good. I would definately leave out the salsa and I will probably try it with about half the chili next time. I used a whole can this time.
