I got this recipe from e-mealz, and it's quickly become one of my favorite things to cook!! Since only 2 of us eat this, I usually have leftovers for several days.
"It's not a fancy dinner, but for a homeschooling mom of 4 (19 - 1 years) it was really a good solid and tasty dinner that was quick to put together after a long day with ingredients I usually have in the pantry. Top-ranked recipe named "Chicken Enchiladas"
Spread about 2 Tbsp of beans on each tortilla. Combine soup and sour cream; stir in chicken. Spoon 1/3 to 1/2 cup down the center of each tortilla; top with 1-2 Tbsp cheese. Roll up and place seam side down in a greased baking dish. Pour enchilada sauce over top; sprinkle with remaining cheese.
Bake, uncovered, at 350(F)for 35 minutes or until heated through.
Serve with a tossed salad.

1DoreenK 1 year agoI also omitted the refried beans but added a can of diced green chilies. Half in the chicken mixture and the other half sprinkled on top with the cheese before baking. YUM

Jengerhardt96 1 year agoThanks for this quick and easy recipe! For filling I used (1 medium) rotisserie chicken (shredded), 1 can fat free Cream of Chicken soup, and shredded mozzarella cheese. Skipped the beans and sour cream. Used 28 oz. red enchilada sauce. Topped with green onions after baking. Beautiful and delicious!

dlabr1 2 years agoI was hopeful that this would be easy, quick and tasty. However, this recipe uses canned chicken and cream of chicken soup. It was high fat and bland. If you are going to make chicken enchiladas, I'd try something else. Some of the variations submitted by reviewers where they used fresh chicken and other changes may improve it. It is quick and easy. I'll give you that.

hlienemann 2 years agoI altered this a bit using rotisserie chicken and added hot sauce. Overall really good and very easy!
Mythgarr 2 years agoI was skeptical, but the beans really add a lot of flavor and depth to the dish. For more variety you can use cream of mushroom soup instead of cream of chicken. Also great with olives and/or mushrooms!
Jojoshoes 2 years agoDelicious and EASY!!! I made a few modifications to the recipe to suit my cooking tastes. I completely omitted the beans inside the enchiladas, used fresh boiled/seasoned chicken instead of canned, and opted for corn tortillas instead of flour (flour sometimes gets soggy in these recipes. I also threw in some green chiles, garlic salt, and Mrs. Dash's Fiesta Lime blend to the chicken mixture for some extra flavor. To save on some fat and calories, I also chose to use reduced fat sour cream, cream of chicken soup, and cheese. All in all, this was a very flavorful, easy, and delicious recipe. My boyfriend and I usually discuss new recipes and decide what we would change the next time we make it...and neither of us could think of a thing!
mwilli56 6 years agoReally good! I didn't know if it was going to be any good or not with the cream of chicken, but it turned out really great! I added onions and green peppers for some extra flavor. Amazing.. must try! Oh.. and Ortega thick and smooth taco sauce is the best with this. =)
