Chicken Enchiladas

I got this recipe from e-mealz, and it's quickly become one of my favorite things to cook!! Since only 2 of us eat this, I usually have leftovers for several days.

"It's not a fancy dinner, but for a homeschooling mom of 4 (19 - 1 years) it was really a good solid and tasty dinner that was quick to put together after a long day with ingredients I usually have in the pantry. This is definatly one I will be keeping and using again. I added spanish rice and refried beans as a side, and just for fun we had tortilla chips with homemade guacamole. "

Ingredients

1 (16-oz) can Refried beans
10 Flour tortillas
1 (12-oz) can Cream of Chicken Soup
8 ounce Sour cream
2 (12-oz) cans Cooked chicken
3 cups Cheddar; shredded
1 (12-oz) can Enchilada sauce

Original recipe makes 5 Servings

Preparation

Spread about 2 Tbsp of beans on each tortilla. Combine soup and sour cream; stir in chicken. Spoon 1/3 to 1/2 cup down the center of each tortilla; top with 1-2 Tbsp cheese. Roll up and place seam side down in a greased baking dish. Pour enchilada sauce over top; sprinkle with remaining cheese.

Bake, uncovered, at 350(F)for 35 minutes or until heated through.

Notes

Serve with a tossed salad.

Huge hit with our family. I made Lisa's Homemade Enchilada Sauce to go with this. We will be making this again!

I also omitted the refried beans but added a can of diced green chilies. Half in the chicken mixture and the other half sprinkled on top with the cheese before baking. YUM

Thanks for this quick and easy recipe! For filling I used (1 medium) rotisserie chicken (shredded), 1 can fat free Cream of Chicken soup, and shredded mozzarella cheese. Skipped the beans and sour cream. Used 28 oz. red enchilada sauce. Topped with green onions after baking. Beautiful and delicious!

I was hopeful that this would be easy, quick and tasty. However, this recipe uses canned chicken and cream of chicken soup. It was high fat and bland. If you are going to make chicken enchiladas, I'd try something else. Some of the variations submitted by reviewers where they used fresh chicken and other changes may improve it. It is quick and easy. I'll give you that.
