Very good pie and great for using all of that extra zucchini!!
Put all of the ingredients in a large bowl in the order given, except the coconut. Pour into 2 uncooked pie shells then top with coconut. Bake for one hour or until golden brown on top in a 375 degree oven. Enjoy.
