This dish is best in the summer when fresh tomatoes are available. It's great with sole as well.

"Tried this for the first time tonight. Thoroughly enjoyed preparing and cooking the dish, almost as much as eating it! I love balsamic vinegar so I used a little more than what the recipe suggested and it didn't overpower the dish at all. Also love a crispy skin on salmon so cooked it for an extra few minutes. 2 Tomato; chopped
1/4 cupBasil; fresh, thinly sliced
1 tablespoonBalsamic vinegar
1 cloveGarlic; minced
3/4 teaspoonSalt
1/4 teaspoonPepper; black, coarsely ground
2 6-ozSalmon filet
1/4 teaspoonCumin; ground
1/2 teaspoonolive oil

Pan-seared Salmon with Fresh Tomato-basil Relish (ww 8 Pts) Preparation

To make the relish, mix the tomatoes, basil, vinegar, garlic, 1/2 tsp of the salt and 1/8 tsp of the pepper in a small bowl and set aside.

Sprinkle both sides of the salon with the cumin and the remaining 1/4 tsp salt and 1/8 tsp pepper. Heat the oil in a large nonstick skillet over medium high heat. Add the salmon, skin-side up and cook about 4 minutes. Turn over the salmon and cook about 1 minute. Reduce the heat and cook covered, until the salmon is just opaque in the center.

Transfer the salmon to a plate and add the relish to the skillet. Increase the heat and cook until the relish is heated through. Once heated move it aside and return the salmon just long enough to reheat it if needed.

Place the salmon on serving plates and spoon the relish over the salmon to serve.

Notes

Out of salmon but when I saw the recipe I thought it would be good with sole as well. It was great. The wife says a keeper for sure.

    I grilled a large one pound salmon fillet, adding about a half cup of the relish in the last couple minutes. I plated the salmon onto a serving dish and poured the rest of the relish over the top. Delish! So juicy!

    I LOVE this recipe! I stuck to the recipe except I used double the cumin, salt, and pepper mixture for my four large filets. I paired the salmon with rice pilaf and broccoli. I will make this again for a refreshing summer meal.
