Diner Meat Loaf "muffins" (6 Points)

Sit down to a meat loaf in a half hour with this recipe. Serve with steamed green beans and roasted potato wedges for an at-home version of a blue-plate special.

1 teaspoonolive oil
1 cupOnion; finely chopped
1/2 cupcarrot; finely chopped
1 teaspoonDried Oregano
2 clovesgarlic; minced
1 cupketchup; divided
1 1/2 poundsExtra Lean Ground Beef; raw
1 cupfat-free saltine crackers; (about 20), finely crushed
2 tablespoonsPrepared mustard
1 teaspoonWorcestershire Sauce
1/4 teaspoonBlack Pepper; freshly ground
2 largeEggs
Cooking spray

Diner Meat Loaf "muffins" (6 Points) Preparation

Preheat oven to 350?.

Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; saute 2 minutes. Cool.

Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350? for 25 minutes or until a thermometer registers 160?. Let stand for 5 minutes.

I am making these for supper with mashed potatoes & asparagus. They are really tasty and freeze well.

I just made these for supper and my entire family loved them. I am not a meatloaf lover at all but I really liked these. They are great with mashed potatoes & veggies. I grated the carrots and I used bread crumbs instead of crackers. I will be making these again for sure. I used an oven temperature of 375 for 30 minutes. Turned out perfect!!!!????
