Diner Meat Loaf "muffins" (6 Points)

Diner Meat Loaf "muffins" (6 Points)

Ready in 45 minutes

Sit down to a meat loaf in a half hour with this recipe. Serve with steamed green beans and roasted potato wedges for an at-home version of a blue-plate special.

"really good - and fun! My husband loved it. This would be a great recipe for kids who might normally dislike meatloaf. The onions and carrots add a nice flavor to the beef, as does the ketchup. And the ketchup on top of each "muffin" is adorable ...and tasy!"

I just made these for supper and my entire family loved them. I am not a meatloaf lover at all but I really liked these. They are great with mashed potatoes & veggies. I grated the carrots and I used bread crumbs instead of crackers. I will be making these again for sure. I used an oven temperature of 375 for 30 minutes. Turned out perfect!!!!????

Very yummy! I know it defeats the whole weight watcher point thing but I added some cheese in the middle before I baked them- - turned out amazing!
