2 10-oz packageFrozen chopped spinach; drained
1 tablespoonOnion Salt; as required
3 cupsPepperidge Farm Herb Stuffing
6 eaEgg; whipped
3/4 cupButter; melted
3/4 cupParmesan; shredded
1 1/2 tspGarlic salt
1/2 tspPepper

Moms Easy Spinach Balls Preparation

Usually make 1/2 this amount, but this is the full recipe.

Thaw spinach and drain really well, get as much moisture out as possible

Whip together the 6 eggs then add remaining ingredients (add melted butter towards the end so that it doesn't cook the eggs).

Melt butter in microwave (don't get too hot though or will cook eggs when you add it)

Grate parmesan cheese (or use pre-made)

If mix is too thin use more parmesan cheese to thicken, I think recipe uses too little parmesan cheese.

Options: Can use finely chopped onion in place of onion salt (original recipe called for real onion).

Measurements for garlic salt, pepper, and onion salt can be varied to taste, no need to be exact measurements. I prefer garlic powder/onion powder instead of the salted powders and I would add salt separately so that you can control how much salt is in the mix.

Roll mix into balls. Size should be larger than a marble, but less than a golf ball. Place on cookie sheet (lightly greased, or use silpat) and cook at 325 degrees for approximately 20 minutes. Check at 15 minutes to insure you don't overcook and dry them out.

Make Ahead / Freezing Options: After rolling out the balls, don't cook them. Place them on a cookie sheet in the freezer until frozen. Then you can move them from cookie sheet to plastic bag for future use. Simply thaw out the frozen balls and cook as directed.
