Chicken Milanese - Breaded Chicken Cutlets

Chicken Milanese (literally, chicken in the style of Milan) is a chicken breast that has been butterflied and lightly flattened out, dipped in beaten egg, then into a breadcrumb-Parmesan mixture and fried in butter. This superb dish is super-easy to make and packed with flavor. The breading is so light and so melt in your mouth good, the meat is moist and tender. It's one of my favorite quick meals for a weeknight. These crispy cutlets not only make an exceptional main dish for dinner, but are equally delightful in a sandwich. I often serve these over pasta, drizzling Alfredo sauce over everything. My father likes them topped with fried eggs and covered with Hollandaise sauce and cheddar cheese...the possibilities for this versatile dish are endless.

This recipe is SO EASY, and it's fast! I just tried it for the first time tonight, but was able to skip the first few steps because I bought skinless, boneless chicken cutlets. It took about 20 minutes to prepare and cook, and it was absolutely delicious! My Dad was very fond of northern Italian cooking, and I wish he were still here to sample this great chicken dish because I know he would love it. My ten-year-old daughter cleaned her plate. I will definitely make this again.

Excellent. It is now "my" recipe. Or so I tell my guests. I use equal part Italian bread crumbs, panko and Romano pecorino, for the breading. But it's the fried egg that makes it special.

I was impressed by the fact that these are actually a cinch to make! We have a total of six people in our house and I'm always on the lookout for recipes that I hope will please everyone - this recipe met that expectation and everyone loved it. Yummy and easy to make!

Excellent! Prepared exactly as written. Served with buttered egg noodles and sautéed asparagus. Family loved it

My fiancé loved it, it was perfect!

Excellent chicken recipe. Tasted great even without the parsley or lemon sauce. Will make again for sure.

Wow! Even my picky parents and 11 year old brother ate it! Amazing flavor, great texture. And, you can use Smart Balance instead of regular butter. :P

Soooo good! Crust is great for fried zucchini too. Be sure to blanch veggi's first and blot dry with paper towel before putting crust on. Don't skip dry time or crust will not stick as well. My family loved it!

Fantastic flavor... Kids smashed it!

Tried this recipe tonight and to my surprise my usually picky hubby and son loved this dish. I added a little cream to the sauce just to take down the bite of the lemon. Turned out great!!! Will keep this in my recipe box.

New family favorite!! We used crushed Ritz crackers mixed with panko bread crumbs and Kraft 3 cheese parmesan. We also fry it in light olive oil. Sooooo crunchy and good!!!

Yummy! Was a lot of steps but the end result was delicious! Burnt 2 pieces because it cooked so fast but still good. The rest of the pieces were great. I also didn't beat the meat and used Italian bread crumbs it tasted fine.

Best chicken ever "SO GOOD IS VERY GOOD"

Excellent. I almost didn't make the lemon sauce - that would have been a big mistake!

I was worried at first that the chicken would come out too dry, but it was absolutely heavenly! Wonderful flavor, very moist, and absolutely to die for. =D

Very good. I left off the sauce and topped it with a fried egg ala Peruvian style.

We really enjoyed this recipe. Truly delicious and will definitely be a favorite.

Really good! I agree it had many steps but great taste! Will definitely make again! We did use one cup of regular bread crumbs because we ran out of Panko. It was still great! We will do that again.

Excellent! Followed recipe exactly. Not difficult but does take a few steps. Well worth the effort! Thanks for sharing.

This is very good. The directions were long so I wasn't sure how easy it would be. I skipped the butterfly portion of cutting the chicken and just tenderized the pieces as they were. It wasn't hard and will get faster each time. I like the suggestions for various uses to make different meals. This may be useful with the prepare ahead and freeze it idea.

I made this dish last night and mixed up my own Italian seasoning mix. Next time im going to try adding garlic powder, omit sage and cook them in a veg/olive oil mix to see which flavors pop. The recipe was excellent as is. My hubby and father-in-law went up 2 times or seconds. ^_^
