Chicken Milanese (literally, chicken in the style of Milan) is a chicken breast that has been butterflied and lightly flattened out, dipped in beaten egg, then into a breadcrumb-Parmesan mixture and fried in butter. This superb dish is super-easy to make and packed with flavor. The breading is so light and so melt in your mouth good, the meat is moist and tender. It's one of my favorite quick meals for a weeknight. These crispy cutlets not only make an exceptional main dish for dinner, but are equally delightful in a sandwich. I often serve these over pasta, drizzling Alfredo sauce over everything. My father likes them topped with fried eggs and covered with Hollandaise sauce and cheddar cheese...the possibilities for this versatile dish are endless.
ccheryl ,this recipe is great and heres a tip if you want clean up to be easy, just use paper bowls and platesd for your egg, flour and bread crumbs and then just toss um when done, no dishes to wash, yeah,,,keep them great recipes coming, thanks, CCheryl13y

vikkiray ,Excellent! We served these along with pan seared asparagus, topped them with poached eggs and covered everything with Hollandaise sauce. Totally delicious! I made a double batch anticipating leftover cutlets to be used in my husbands lunch. He was very pleased with his dinner and and even more pleased his lunches.14y

fl23140 ,It was excellent--the Panko crumbs stuck to the chicken very well. Definitely will make again, but cut the dried Italian seasoning in half.14y
s2abby21 ,OMG! I am 13 and I love to cook.......THIS! Lol This is the best recipe for chicken, ever! I have been to Italy 3 times now, and most recently I was in Milan staying with a family. They made the traditional Cuttletta alla Milanese and it was heavenly! When I got home, I searched for that recipe, and came upon this. I had to try it! This is an authentic recipe and is exquisite. I am using a mixture of panko and regular breadcrumbs, tonight actually. As this chicken is cooking for its last minute, I squease lemon juice on both sides, as they did in Milan. thehitch ,Using Progresso italian bread crumbs adds a nice flavor to this dish. I used a truffle olive oil that really browned this dish up nicely.14y

My teenage daughter had requested it after seeing an Olive Garden commercial (we don't have one nearby) and she said it was probably better than theirs anyway! Her boyfriend, who doesn't normally like chicken that much said, "Hey, this is pretty good!" I didn't bother with the pounding, and as a note, the chicken is easier to butterfly if it is slightly frozen. I used a combination of Panko crumbs15y
