Bam's Pinto and Refried Beans

For Bryan. This is really two recipes, as you can make refried beans out of your leftover pintos. Serve with cornbread, fried potatoes, or rice and top with salsa and cheese for a meatless Tex-Mex dish.

"To make refried beans, remove beans from juice to a bowl. Mash the beans with a potato masher until you get the desired consistancy. Fry a strip or two of bacon in a non-stick skillet.Remove bacon and transfer the beans to the skillet. Fry the beans on medium heat turning often with a spatula until they reach the desired consistancy and are heated through. Top with grated cheese just prior to serving or spoon into warmed flour tortillas, top with cheese and any other toppings you like - onions, salsa, green chilies, etc., roll up, and eat." - Beachbumette

1 poundPinto beans; sorted and rinsed
water; to cover beans about 3 inches above the level of the beans
1 1/2 teaspoonSalt
1 teaspoonChili powder
1 1/2 teaspoonGround cumin
1/2 teaspoonBlack pepper
1/2 teaspoonGarlic powder
1 onion; Chopped, optional

Bam's Pinto and Refried Beans Preparation

Place the rinsed and sorted beans in a lidded stockpot and cover with water about 3 inches above the level of the beans. Add the salt and cook on low covered almost all day (at least 6 hours), stirring and checking water levels occasionally. If they get too dry, boil water to add - NEVER ADD COLD WATER - it will make the beans hard. When the beans start getting a nice, slightly thickened broth, add the remaining seasonings and onion, if desired. Cook an additional half an hour or until the onion is soft. I really enjoyed the beans refried (a few days later) for some vegetarian tacos with fresh guacamole. My first attempt with dried beans... I'm sure it was healthier than canned but I'm not certain it was worth the effort. A slow cooker recipe would make this even better.

Excellent! Made these as refried beans as a side dish for some pork carnitas. The kids and wife all agreed they were much better than the stuff in a can. It's easy enough to make where they will certainly be a repeat.

I followed the recipe but I made a little adjustment. When boiling, I added salt pork and it made such a difference in taste when I finally removed it and fried it on the pan. Salt pork that's the ticket.
