Apple Cinnamon Muffins

This is super easy and makes a large batch - you can keep the batter in the fridge for several weeks and make the muffins when you need them.

Ingredients

1 cup Butter
2 Eggs
2 teaspoons Baking soda
1/8 teaspoon Salt
2 cups Sugar
2 cups Cinnamon Applesauce; (hot) - or regular applesauce - add cinnamon
4 cups Flour

Original recipe makes 24

Servings  

Preparation

Place applesauce and sticks of butter in large bowl and heat in microwave until butter is melted (approximately 5 minutes - stirring after each minute). Mix all ingredients together.

Bake at 350 degrees - mini muffins for 10-15 minutes, regualr muffins for 20-25 minutes.

This mixture may be kept in the fridge for several weeks. It makes a large batch.

Notes

Original recipe called for regular applesauce + 3 tsp cinnamon, 1 tsp ground cloves, & 2 tsp allspice (we don't care for that much spice).

We love these delicious muffins. It is a temptation to bake a lot but fortunately as the batter keeps we are not piling on the pounds and keep some for another day.
