Original recipe makes 4
2 tablespoonsOnion; minced
1/2 cupBread crumbs
2 Egg whites
1/2 cupSkim milk
2 cupsflaked canned salmon; (15 oz can)
2 tablespoonsChopped parsley
4 tablespoonsfat-free mayonnaise; or Tartar sauce

Salmon Patties Preparation

Preheat oven to 450 degrees. Spray a baking sheet generously with non-stick spray.

In a large bowl combine all ingredients except salmon and mayonnaise. Mix in the salmon, shape into 4 balls and flatten. Place patties onto the baking sheet and bake for 5 minutes, turn patties over and bake another 5 to 8 minutes, or until crisp and slightly browned. Serve topped with a tablespoon of the mayonnaise.

This recipe yields 4 patties.

Comments: To modify the topping you may add dill and/or lemon juice to the fat-free mayonnaise.
