A great snack for the kids for after school.
"My husband and two teenage boys are the cookie monsters in our home. I made the recipe exactly as it's written with one exception...my youngest son doesn't like to "see" the oatmeal in the cookie so I put the dry oatmeal in my food processor and pulsed it 4-5 times then added it my cookie mixture. | 3/4 cupBrown sugar; firmly packed |
| 1/4 cupGranulated sugar |

| 2/3 teaspoonVanilla |

| 1 1/2 cupsQuick cooking oatmeal; uncooked |

| 1/4 teaspoonSalt; optional |
Chewy Oatmeal Raisin Cookies Preparation
Preheat oven to 350. Beat together butter and sugars until creamy. Add egg and vanilla and beat well. In a seperate bowl, combine flour, baking soda, cinnamon, and salt (optional) and mix well. Add combined flour mixture to the sugar mixture and stir until blended Stir in oatmeal and raisins and mix well. Drop by rounded tablespoons onto an ungreased cookie sheet and bake 10-12 minutes or until golden brown. Cool one minute on cookie sheet and remove to wire rack to finish cooling.
