Original recipe makes 10
1 packageDuncan Hines Devils Food or Marble cake mix
2 pintsPart-skim Ricotta Cheese
1 cupSugar
1 teaspoonWilton Vanilla Flavoring
4 Eggs
1 boxInstant Chocolate Pudding
1 cupmilk or Heavy cream
1 containerfrozen whipped Topping; thawed

Italian Love Cake Preparation

Prepare cake mix as directed on the box. Pour the batter into 9 x 13 x 2 inch greased baking dish. Set this aside.

Combine ricotta cheese,sugar,vanilla and eggs. Blend well. Spread the mixture evenly on top of the cake mixture.

Bake at 350 degrees for 55 minutes to 60 minutes.

Blend Pudding mix and milk until thickened then fold in the whipped cream. Spread over cooled cake.

I did something wrong because my ricotta did no it go to the bottom. It looked marbled and I could see where in some places it went down a bit so I flipped it and served it upside down so it looked like yours. I wonder where I went wrong? It still tasted very good and I will attempt again.

made this last night. It was very good. It is not that sweet at all. Not very rich as you would think. If it didn't have the pudding mixture on top, I think it wouldnt be as good. I will definitely make this again. Pretty cool watching the chocolate envelope the ricotta cheese mixture while backing. I'm assuming that you would have to refrigerate the cake after cooling? They way I served it was not to ice the cake with the pudding mixture after cooling, I just put a dollop on top of each pieced served.

Remember, when you pour the ricotta cheese mixture on top of the cake mixture, while baking, the ricotta cheese mixture will settle on the bottom. The picture is the actual cake I baked and is simply a hit everytime I make it. Very light tasting too!!

I have frozen the cake. It can get too moist when frozen with the topping. I think I'd freeze it without the topping and add it as the cake thaws.

So delicious and moist. I love it cold! The ricotta mixture on top somehow sinks to the bottom while it bakes. Very interesting!!
