Autumn Salad with Red Wine Vinegrette

| 2 tablespoonsRed wine vinegar |
| 1/2 teaspoonSugar |
| 1/2 teaspoonGarlic; minced |
| 1/4 teaspoonPaprika |
| 1/4 teaspoonDry mustard |
| 1/8 teaspoonSalt |
| pinchDried basil |
| pinchGround red pepper |

| 5 cupsmixed salad greens |
| 4 cupsRomaine lettuce; torn |
| 2 1/2 cupsAsian pear; (about 1 large) cubed |
| 2 cupsGranny smith apple; (about 1 large) cubed |
| 1/2 cupRed onion; as required |
| 1/4 cupGoat Cheese; (1 ounce) crumbled |
Autumn Salad with Red Wine Vinegrette Preparation
1. Combine first 9 ingredients in a bowl, stirring with a whisk.
2. Combine salad greens, romaine lettuce, Asian pear, apple, and red onion in a large bowl. Drizzle with vinaigrette, and toss well to coat. Sprinkle with crumbled goat cheese.
Notes
This recipe is similar to a salad Hunt traditionally serves at her annual gathering, using locally grown Asian pears and Macoun apples. Asian pears and Granny Smith apples (a good substitute for Macouns) are available at supermarkets.
