Preparation time 15 minutes.
Cooking time 40 minutes
Preheat oven to 160?c fan-forced+. Cut bread into triangles. Lightly spray with oliv oil. Bake in batches for 6 minutes or until crisp. Increase oven temperature to 180?c.
Heat oil in a larg saucepan over medium-high heat. Cook onion for 2 minutes. Add mice and cook until browned. Add chilli powder and cook for 1 minute. Add tomatoes, zucchini, carrot, tomato paste, water and beans to the pan. Simmer, covered, for 12 minutes or until liquid is absorbed.
Arrange triangles in 6 heatproof dishes. Spoon meat into the sentre. Sprinkle with cheese. Return to oven for 5-10 minutes or until cheese melts. top with sour cream and serve immediately.
Jan's Notes:
we all enjoyed this would be nice with taco seasoning I toped it with tzatziki dip very nice. Made the meat in the morning and finshed off in oven that night. Emma likes it better with out the 3/4 cup red kidney beans drained. I use Wholemael - lit lebanese bread and cut each round into 8 peics (I use scisors to do this) to put into the oven.
