Crock Pot Chicken Dinner

I put this together the night before I cooked it and it made an easy meal for after work. Next time, I will add a few more seasonings, as it was a little bland for our tastes, but overall, a good recipe.

Made this as a meal to put in the fridge for dinners this week.
Well 10 minutes of me chopping up vegetables and let the crock pot do it's thing for about 7 hours (on low).
For future reference I will take the skin of the chicken to reduce the fat.
In Australia I used McCormicks Season All(Seasoned Salt) and McCormicks Bush Spices (features Australian bush spices) to spike up the flavour.

1 Whole fryer chicken; about 3 1/2 pounds
20 Baby carrots; (or 4 large cut into pieces)
2 ribsCelery; cut into pieces (optional)
2 Onions; quartered
4 mediumRed potatoes; quartered (see notes)
2 teaspoonLawry's season salt
1/2 cupWater

Crock Pot Chicken Dinner Preparation

Place the carrots in the bottom of a 4 1/2 quart or larger crock pot. Add celery, onions, and potatoes to the bottom of the pot. Add the water and sprinkle the vegetables with 1 teaspoon of the seasoning salt. Remove the neck and giblets from the cavity of the chicken and rinse inside and out with cold water. At this point, I removed the skin from the back of the chicken to reduce the fat content. Place the chicken, breast side up, in the pot on top of the vegetables. Sprinkle the remaining teaspoon of season salt over the chicken and add other spices, if desired. I would add some garlic and parsley - anything your family likes on chicken. Cook on the low setting for 7 to 8 hours.

Notes

You can use red or russet potatoes. Just scrub and leave the peelings on or peel them.

Made this with some variations - I put a whole onion inside the chicken (stolen from slower cooker rotisserie style chicken found on bigoven) to help keep it moist and add flavor. also seasoned veggies with garlic powder, salt, pepper. seasoned the chicken with garlic powder, rosemary and pepper. turned out great.

I made this with chicken broth and a little white wine instead of water. I also used garlic powder, fresh garlic, and weber 'Kick n' Chicken. Pretty good!

I made this but added cream of chicken to it with a little more water & added corn and put it over rice ..instead of using potatoes! Sooo Good!!

This is a very good recipe for a busy workday! Instead of water I added 1/2cup of chicken broth. I also sprinkled on black pepper, about 1 Tbs parsley, and threw in 1 minced clove of garlic. When it finished cooking, I used the remaining liquid and 1 dry packet of chicken gravy mix to make gravy for the potatoes. Very delish!

I made this for my family. They enjoyed it very much. I added more salt and herbs to make it more flavorful. I also added the veggies half way through the baking time as to not end up with mushy veggies.
