|1 15-oz canBush's black beans; rinsed and drained|
|1 4-oz canRipe olives; chopped|
|1/4 cupWhite onion; finely chopped and rinsed|
|1 clovegarlic; finely chopped|
|2 tablespoonsVegetable oil|
|2 tablespoonsLime juice; fresh squeezed|
|1/4 teaspoonRed pepper; crushed|
|1/4 teaspoonGround cumin|
|8 ozCream cheese; softened|
|2 largeEggs; hard cooked, peeled and chopped|
|1 Green onion; with top, sliced|
Cowboy Caviar Preparation
Drain and rinse the black beans; drain the chopped ripe olives.
Mix all ingredients except cream cheese, eggs and green onion. Cover and refrigerate at least 2 hours.
Spread cream cheese on a serving plate and spoon bean mixture evenly over the cream cheese.
Arrange chopped eggs on bean mixture in a ring around the edge of the serving plate and sprinkle with green onion.
Serve with crackers.
