Original recipe makes 12
1 15-oz canBush's black beans; rinsed and drained
1 4-oz canRipe olives; chopped
1/4 cupWhite onion; finely chopped and rinsed
1 clovegarlic; finely chopped
2 tablespoonsVegetable oil
2 tablespoonsLime juice; fresh squeezed
1/4 teaspoonSalt
1/4 teaspoonRed pepper; crushed
1/4 teaspoonGround cumin
1/8 teaspoonPepper
8 ozCream cheese; softened
2 largeEggs; hard cooked, peeled and chopped
1 Green onion; with top, sliced

Cowboy Caviar Preparation

Drain and rinse the black beans; drain the chopped ripe olives.

Mix all ingredients except cream cheese, eggs and green onion. Cover and refrigerate at least 2 hours.

Spread cream cheese on a serving plate and spoon bean mixture evenly over the cream cheese.

Arrange chopped eggs on bean mixture in a ring around the edge of the serving plate and sprinkle with green onion.

Serve with crackers.
