| 1 15-oz canBush's black beans; rinsed and drained |
| 1 4-oz canRipe olives; chopped |
| 1/4 cupWhite onion; finely chopped and rinsed |
| 1 clovegarlic; finely chopped |
| 2 tablespoonsVegetable oil |
| 2 tablespoonsLime juice; fresh squeezed |
| 1/4 teaspoonSalt |
| 1/4 teaspoonRed pepper; crushed |
| 1/4 teaspoonGround cumin |
| 1/8 teaspoonPepper |
| 8 ozCream cheese; softened |
| 2 largeEggs; hard cooked, peeled and chopped |
| 1 Green onion; with top, sliced |
Cowboy Caviar Preparation
Drain and rinse the black beans; drain the chopped ripe olives.
Mix all ingredients except cream cheese, eggs and green onion. Cover and refrigerate at least 2 hours.
Spread cream cheese on a serving plate and spoon bean mixture evenly over the cream cheese.
Arrange chopped eggs on bean mixture in a ring around the edge of the serving plate and sprinkle with green onion.
Serve with crackers.
