"Versatile recipe. Could use shrimp instead. We thought it needed some salt in the form of soy sauce, fish sauce, or table salt maybe because our tastes run towards the exotic flavorful tastes of Thai cooking. Original recipe makes 4 Servings
1/2 cChicken broth
1/3 cHoisin sauce
1/4 cPeanut butter; creamy
2 tablespoonRice vinegar
2 tablespoonKetchup
1/4 teaspoonCrushed red pepper; leave out to make kid-friendly
2 teaspoonDark sesame oil
1 lbChicken; cut into bite-size pieces
1 1/2 cRed bell pepper; cut into strips
1 tablespoonGinger; grated
1 teaspoonGarlic; minced
1/2 cGreen onion; chopped
2 bunchBroccoli; steamed
1 poundUdon Noodles

Pasta- Chicken Noodles with Broccoli Peanut Sauce Preparation

1. Cook noodles according to package directions, drain.

2. Combine broth and next 5 ingredients (broth through crushed red pepper) in a bowl, stir well with a whisk.

3. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add the chicken, saute 4 minutes. Add bell pepper, saute 3 minutes. Remove from heat. Combine chicken mixture and noodles in a large bowl.

4. Heat l teaspoon oil in pan over medium heat. Add ginger and garlic, cook 15 seconds. Stir in broth mixture, cook 30 seconds, stirring constantly. Add the broth mixture and 1/4 cup green onions to noodle mixture, toss well. Add in steamed broccoli. Top with 1/4 c green onions.

    This is a favorite in our house! It is inspired by a dish from a San Francisco Thai restaurant we used to go to years ago.

    So good! Added some steamed bok choy and used regular white vinegar (since I didnt have rice vinegar) with a teaspoon of sugar. Will definitely make again!

    Not a bad recipie. Fairly easy & i am not a cook. I found that i really tasted & smelled the ketchup so I would likely use less next time & definitely more spice!!!

    I didn't have Hoisin sauce, so I substituted teriyaki, soy & saracha, but it was very bland. I will definitely try again with Hoisin.
