Animal Crackers meet French Fries. Kids love these.
Mix dry ingredients then add wet to form a soft (but not sticky) dough. Cover and hold in refrigerator overnight.
Adjust consistancy of the dough with milk or potato as needed to allow rolling it out. Dust counter and rolling pin with potato flour. Roll out to about 3/8 inch thick (a bit thicker than pie crust). Use cookie cutters to cut out animals or other shapes.
Heat oil in deep fryer or appropriate pan to about 365F. Reduce heat to medium and fry each one to a golden brown. About 1 minute per side seems to work for me. Scoop out and drain on paper towel. Sprinkle lightly with salt if desired.
Makes about 16 large or 24 small fries.

When we took our granddaughter to the zoo she thought their animal shaped fries were a special treat. It took Grandpa a few trials in the kitchen to hit on this method but they come out just like the zoo ones.
