A very colorful salad with a tangy lime dressing.

"It is a cool salad that can be for almost any occassion. you can also add or change the vegetable ingredients as long as the dressing stays the same. The lime juice makes it. It is one of my favorites and always recieves great comments from my guest." - bherickson

Original recipe makes 4
1/3 cupFresh lime juice
1/2 cupolive oil
1 cloveGarlic; minced
1 tspSalt
1/8 tspGround cayenne pepper
2 15-oz cansBlack beans; drained and rinsed
1/2 cupsFrozen corn kernels
1 Avocado; peeled, pitted, diced
1 Red bel pepper; chopped
2 largeTomates; chopped
6 Scallions; thinly sliced
1/2 cupFresh cilantro; chopped

Black Bean and Corn Salad with Lime Dressing Preparation

1. Place lime juice, olive oil, garlic, salt and cayenne pepper in a small jar. Cover witrh a tight lid and shake until ingredients are well mixed.

2. In salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, scallions and cilantro. Shake lime dressing again and pour over the salad. Toss salad to coat ingredients. Chill for 3 hours before serving.

    I made this last night and it was fabulous! I used less of the beans and a little more corn because I had fresh corn on hand. I also used chipotle chili powder instead of the cayenne pepper. A definite keeper!
