A very colorful salad with a tangy lime dressing.
"It is a cool salad that can be for almost any occassion. you can also add or change the vegetable ingredients as long as the dressing stays the same. The lime juice makes it. It is one of my favorites and always recieves great comments from my guest."- bherickson

1. Place lime juice, olive oil, garlic, salt and cayenne pepper in a small jar. Cover witrh a tight lid and shake until ingredients are well mixed.
2. In salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, scallions and cilantro. Shake lime dressing again and pour over the salad. Toss salad to coat ingredients. Chill for 3 hours before serving.

Juneoswald 1 year agoVery good and easy to make. I added a little red onion and used a little less olive oil. This is a good way to get you veggies in! Yum yum!!

Astoria2151 2 years agoI made this last night and it was fabulous! I used less of the beans and a little more corn because I had fresh corn on hand. I also used chipotle chili powder instead of the cayenne pepper. A definite keeper!

Crystls 2 years agoI made this three weeks ago for the first time, and have been making it once a week ever since. I'm putting this on my favorites! It's especially good with fresh corn sautéed on the stove.

G30003 2 years agoWhat a great dish. I ran out of black beans so I put blackeye peas instead and it tasted really good.
