| 1/2 cupolive oil |
| 1 cloveGarlic; minced |
| 1 tspSalt |
| 1/8 tspGround cayenne pepper |
| 2 15-oz cansBlack beans; drained and rinsed |
| 1/2 cupsFrozen corn kernels |
| 1 Avocado; peeled, pitted, diced |
| 1 Red bel pepper; chopped |
| 2 largeTomates; chopped |
| 6 Scallions; thinly sliced |
| 1/2 cupFresh cilantro; chopped |
Black Bean and Corn Salad with Lime Dressing Preparation
1. Place lime juice, olive oil, garlic, salt and cayenne pepper in a small jar. Cover witrh a tight lid and shake until ingredients are well mixed.
2. In salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, scallions and cilantro. Shake lime dressing again and pour over the salad. Toss salad to coat ingredients. Chill for 3 hours before serving.
