A very colorful salad with a tangy lime dressing.
"It is a cool salad that can be for almost any occassion. you can also add or change the vegetable ingredients as long as the dressing stays the same. The lime juice makes it. It is one of my favorites and always recieves great comments from my guest."- bherickson

1. Place lime juice, olive oil, garlic, salt and cayenne pepper in a small jar. Cover witrh a tight lid and shake until ingredients are well mixed.
2. In salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, scallions and cilantro. Shake lime dressing again and pour over the salad. Toss salad to coat ingredients. Chill for 3 hours before serving.

pols005 6 months agoI riffed on this recipe a little in order to adjust it to fit some leftovers I had in the fridge. It made an absolutely fabulous light lunch! I would definitely make this again.
