Beef Green Chili Stew

I haven't tried this yet, but it's supposed to be similar to what Poncho's serves. I like the stew served over rice.

"Making it right now!! Was pretty simple to prepare...I did make it with stew beef, so I'm hoping it's not too tough :-/ Also, I'm from NM and we like our food pretty spicy...so I threw in a few habanero for a little more kick! I've been tasting it while it's Cookin and so far so good! I'll let y'all know when it's done. And also what my hubby thinks of it, he's pretty picky...so if he likes it...it be good! LOL"

1 tablespoonVegetable oil
2 poundLean beef stew meat
1 onionOnion; chopped
1 10-oz containerDiced tomatoes with green chili peppers
1 1/2 cupsBeef broth
1 4-oz containerChopped green chili peppers
1 teaspoonGarlic salt
1 teaspoonGround cumin
Salt to taste
Ground black pepper to taste
2 largePotatoes; peeled and cubed

Beef Green Chili Stew Preparation

In a large pot over medium heat, heat the oil and brown the stew meat and the onions until onions are translucent; about 5 minutes. Pour in diced tomatoes, beef broth, and chili peppers. Stir in the garlic salt and cumin. Salt and pepper to taste. Bring to a boil, reduce heat and simmer for 1 hour. Add a little more beef broth or water if needed during simmering. Stir in cubed potatoes and simmer for an additional 30 minutes or until potatoes are tender. Serve over rice or with cornbread.

The flavor of this delightful stew was pretty impressive. I did make one small addition. I chopped-up some leftover fire-roasted pablano peppers and threw them into the mix.

Very good! This is one of my favorite recipes. It's very close to what I had at Ponchos until they closed their Metairie restaurant after Katrina. The only thing that I do diffrently is roll the beef stew in a little flour to make the gravy a little thicker, and it also comes out well cooking it in a crock pot. It has the best arouma when cooking.

I did make this and while it was very flavorful and slightly spicy, I will make the following changes next time I make it and some suggestions for those planning to try it. The beef stew meat that I used was pretty tough, even after cooking for about an hour longer than the recommended time. Because of the increased cooking time, I ended up adding 32 ounces of beef broth. I also added a diced poblano pepper and salted and peppered the meat while browning. Next time, I will try this recipe using pork tenderloin. I think Green Chili Stew is supposed to be made with pork, but if you decide to use beef, I think I'd try making this a crock pot recipe after browning the meat. A crock pot seems to make all types of meat tender due to the slow cooking over longer periods of time. I am upgrading it from 4 stars to 5 because of the excellent flavor of the dish!
