Pancakes with a smile cooked in. Kids love these and they're incredibly easy to do.
This isn't a recipe so much as a cooking technique. You can use your favorite baking mix or make batter from scratch.
Make pancake batter according to package directions. Lightly oil a griddle. Heat until drops of water dance briefly before evaporating. Cut the heat back just a little to maintain an even griddle temperature.
Using a tablespoon pour batter to form a face on the griddle. Remember that the design will be reversed when you flip the pancake over. You can also put some batter in a plastic bag, nip off a corner, and squeeze out the batter if that's easier for you. Allow the batter to cook until it looks a little dry on top, about 2/3 done.
Now pour about a 1/4 cup of batter over the design to form a 6 inch round. Allow this to cook until bubbles form and the top appears fairly dry. Flip the pancake over and cook intil the 2nd side is lightly browned. Remove to a warmed plate and serve (or hold in a warm oven).
Notes:
While we made smiley faces other designs are certainly possible depending on available time and your artistic ability. Just remember to work "backwards" as the design will be viewed from the other side.
You could also set aside a small amount of batter and add something to color it such as chocolate, blueberry juice, or other color. Use that for the design and plain batter for the cake.
These are even more fun if the children are old enough to safely help at the stove. Letting them pick their own designs personalizes their individual efforts and make the dish even more "special"
