Pumpkin Pancakes
| 15 ouncePumpkin; solid pack |
| 12 ounceEvaporated milk |
| 1/4 cupSugar |
| 3 tablespoonPumpkin pie spice |
| 3 cupsMultigrain flour |
| 1 envelopeSkim milk powder |
| 2 cupmilk |
| 2 teaspoonBaking soda |
| 2 teaspoonBaking Powder |
| 2 largeEggs |
Pumpkin Pancakes Preparation
*** skim milk powder--- i use an envelope that makes a quart of ''''milk''''. I use it dry in recipe.
*** I dont usually measure ingredients, I made this up as i went along. The dry ingredients are pretty close except for the flour. I adjust the consistancey with milk.
Mix pumpkin and dry milk powder. Add evaporated milk. Then add spice, flour, eggs and then milk to pancake consistancey. Add baking soda and powder last. Mix well and cook on griddle or frying pbkean.
**CREAM CHEESE BUTTER***
4 oz softened naufchetel cream cheese
3 Tablespoons softened butter
4 Tablespoons confectionary sugar.
Mix together well and spread on pancakes.
