Fresh grilled Tilapia topped with artichoke hearts, sun-dried tomatoes, green onions and a light lemon sauce. Serve with fresh steamed veggies.

Ingredients

4 filet Tilapia; 8 oz each
1/4 pound Butter
1/3 cup Sun-dried tomatoes; sliced
1 cup Artichoke hearts; sliced
1 tablespoon Garlic; crushed
1 tablespoon Lemon-pepper
3/4 cup Heavy cream
2 teaspoon Lemon juice
1 tablespoon Green onion; chopped

Preparation

In a saute pan melt 1/4 pounds of butter. Add artichoke hearts, garlic, lemon pepper and sun-dried tomatoes. saute for 3-5 minutes, then add heavy cream. Reduce by Half.

While sauce is reducing, heat a skillet to medium to hot. Sprinke lemon juice on both sides of the Tilapia, then brown the Tilapia fillets in the skillet (approximately 2 minutes on each side).

Toss the sauce and serve over fish, sprinkle with diced green onion. Serve with couscous and steamed veggies on the side (brocollie works great!).

This recipe is excellent and I used swordfish. My only tip is add a bit of lemon juice and don't cook for to long because if you do the butter and cream will separate. To fix that issue I added more cream.

My family adored this, even the kids who luckily aren't picky about artichoke hearts! This was very fresh and flavorful, the richness of the cream and butter brought the flavors together delightfully. This will be a repeater!

Taste great! Used half and half instead of heavy cream to reduce calories. Served with orzo and squash & zucchini. Only wished I could have made the presentation prettier.
