Super easy to make Spanish Rice

"Very good and simple mexican rice recipe. The tomato sauce is a little heavy, but not overwhelming, next time I may tone it down a hair. It was definitly a simple, quick, and easy recipe to make for a nice mexican meal! I served it with some black beans, and some leftover tequilla lime grilled chicken, a recipe that I also found from this site!"

2 cupsuncooked long grain rice
2 canschicken broth
1 cupwater
1 smallonion; minced
1 cantomato sauce
1 tablespoongarlic salt
1 teaspooncumin
2 tablespoonscooking oil

Authentic Simple Spanish Rice Preparation

Brown rice in oil on med-high heat.

Add onions and tomato sauce. Mix well but don't over mix!

Add chicken broth, water, garlic salt and cumin.

Taste for appropriate seasoning (everyone is different!)

Bring to a boil, cover and simmer on med-low heat for about 20 min or until all the water is gone.

I added pigeon peas about 2/3 of a can and 1 tablespoon of sliced salad olives. Olive oil about 1/4 cup or so was used to cook rice translucent with onion. At that point, all other ingredients including olives and pigeon peas were added.

Cut the recipe in half an it came out amazing. I've attempted Spanish rice before and always failed miserably. I added cumin, garlic, salt, pepper and a little cayenne before simmering.

I might also add that it did sound a bit bland to me so the first time I tried it I added Rotel tomato sauce that i bought by accident instead of the plain. It gives it a bit of spice, but it's quite mellow.

Very good rice. I added some cilantro. And my garlic salt had parsley in it. Turned out REALLY good and was easy.

The recipe is good. The spanish ladies I work with loved it, but i think it would be better with some carrots and peas. Only because thats how im use to having it.
