"This was so simple, easy and delicious! My husband and family loved it. It's a definite keeper! I did peel and cube my potatoes (1/2" x 1/2" x1/2") and placed them in a large pot with enough water to cover them. I brought it to a boil and cooked for 10 minutes. I drained them and placed in a serving bowl. I stirred in the onion, salt, and pepper while they were hot (this allows the potato to absorb the flavor) and let sit for about 20 mins while I mixed all other ingredients. 1/2 cupMayo Real Mayonnaise; to taste
1 Tbsp.Pure Prepared Mustard
1/2 tsp.Salt
1/8 tsp.Pepper
4 cupspotatoes; cubed, 4 to 5 boiled potatoes
6 hard-cookedEggs; boiled and then chopped
1/2 cuponion; chopped
1 cupcelery; sliced
1/3 cupPickled sweet relish; to taste

Woods Family Potato Salad Preparation

Boil potatoes for 30 to 40 minutes or until tender. Once cooled, peal and cube potatoes.

Bring eggs to a boil, turn off heat and cover. Let the eggs cook for about 20 minutes. Remove the eggs from the heat and place eggs into a bowl of ice water. Peal and dice eggs.

Mix mayonnaise, mustard and seasonings together in a large bowl.

Add remaining ingredients; mix lightly. Add more or less mayonnaise to taste. Garnish with paprika seasoning and coin size egg slices. Cover. Refrigerate several hours or until chilled.

    This was very good. Just a few changes out of necessity. Didn't have enough relish, so I used a few chopped pickles, I added olives, and chopped carrots and i mixed in a little grainy mustard with the regular mustard.

    It's a delicious recipe, but not enough mayo for all the potatoes so I added about 1/2 a cup more. The eggs really made the dish more flavorful. I hadn't tried using eggs until the recipe, thanks!
